Kopi luwak is produced mainly on the islands of Sumatra, Java, Bali and Sulawesi in the Indonesian Archipelago.
ReplyDeleteIt is also in the Philippines - where the product is called motit coffee in the Cordillera and kape alamid in Tagalog areas.
It is also found in East Timor - where it is called kafé-laku.
Weasel coffee is a loose English translation of its name cà phê Chồn in Vietnam.
Civet coffee, is made from the beans of coffee berries which have been eaten by the Asian Palm Civet (Paradoxurus hermaphroditus) and other related civets, then passed through its digestive tract :-)

my friend in Sagada, roasted raw Motit beans, & made Catpoohchino!...it was my best coffee...the ambience absolutely added to our late afternoon...i wish i could show you their house...it is called, House on the Rocks...built on top of limestone cliffs,with majestic views & sound of flowing stream...ay Sagada!

ReplyDeleteBeans eaten by the Civet cats are ripe beans...the digestion of the raw beans inside the cat cures the beans...Resst assured these are cleaned and still unroasted...Lami Gyud!

I am in Cebu, but pretty busy...it was like one thing after another had broken down - car, alarm, shower, hearing aid..hay...fuerte nakong tuyok...but am also working *grin*
plan to go to Sibonga tomorrow...wa madayon karon due to the things I had to help them with at home...and with the car..
actually, its still like coffee...but although it had a strong flavor of coffee, there wasn't any bitterness at all...it was smooth-tasting...

ReplyDeletethey do clean it very well and then roast it afterwards...
one must be careful though not to get those "fake" ones, maybe its not so clean or not that cured enough..
hmmm...maybe next time..tea leaves eaten by civet cats? mwahaha!

ReplyDeleteBefore Alamid or Motit coffee became popular in Sagada, people used to hunt this cat for food...now that there is a strong demand & bec. of its high price...it is no longer hunted...a favorite habitat of these cats are limestone dwellings, Sagada is abound by limestone...this is also true in Palawan, where civet cat thrives.
ReplyDeleteA friend of mine from Sagada told me a story of his father asking him to get coffee from the back of the house, although they didn't have a coffee tree...but in their backyard close to limestone formations, they would find droppings of coffee, that they would pick, roast & brew.
