Reminiscing in Cebu: Looking for Lechon Kawali

I woke up...hungry.

I woke up...with a craving.

I had a hazy dream where cute pink piggies frolicked on green grass then ended up in my plate "oinking" with glee, but ..uhm...festooned with ...garlands of garlic? And how the heck could they oink with glee if they had an apple stuck between their teeth?!

Well, obviously, after eating pochero at Abuhan the other night, it was time to up the ante, if you get what I mean. After pochero, it had to be lechon kawali on my subconscious mind. Either that or go after lechon, lechon de leche, lechon cochinillo or whatever term they used as long as there was this word - lechon!

I didn't have time to go to Talisay, nor to any other places (like the mall where one could get a kilo or more of the chopped up porky goodness from well-known makers),  so after a light repast I told my mom I wanted to see if "Marjo's" was still around.

It used to be near the Capitol Provincial Building and started out ages ago as an unassuming little "carenderia"-style eatery - offering humongous bowls of scalding-hot pochero paired with sliced crispy lechon kawali. I have always wondered what the secret was to keeping these artery-clogging temptations on display with such crispy skin. These bestsellers could walk unescorted to the customers' table.

Weaving through worsening traffic, I turned left on a familiar road and asked the security guard at Mayflower Inn where Marjo's was and he said, "Ah! the pocherohan?" then pointed us forward.

Hmm...well....its now known as Sabel and seems to still offer the good ole heart-thumping cholesterol-ridden pork and beef masterpieces.


An ever-tightening schedule made me ask my mom to get a sample of their lechon kawali just so I could say I tasted it again after all these years.


I'm afraid that sampling their pochero and other specialties wasn't in my menu that day as I still had to drive my parents somewhere else afterward and I didn't want to risk having a heart attack after eating such a rich meal *kidding*

I literally dashed in and out of Sabel's though I managed a quick smile at the owner.  If I had more time, I'd have ordered pochero again (for merienda?!). My reminiscing the other night had taken me back to my younger days of devouring chunks of tender beef and melt-in-your-mouth bone marrow while seated at assorted-size tables and fending off fiendishly buzzing flies and waves of heat (this probably added to my perception of the viands' flavor).

Ah..those good ole days wherein my dining partners would just heartily thunk the big bone of the beef  on the table and scrape out the utok (literal meaning: "brain") of those thick beef bones with the help of the end of a fork or a forgotten popsicle stick.


The next time I visit, I promised myself - I would make time to invite some of my guy friends (or those friends of mine who have hearty appetites) to help me polish off a big bowl of the pochero and a heaping plateful of lechon kawali.

For now though I had to be content with making "lanlan" (meaning: to eat solely the viand, without rice or any other accompaniment) half of the kawali-goodness. I swear I could almost hear an ecstatic oink in the background as I wolfed the pieces down. Or maybe..that was just moi?

    Kat, what would the food tripping list have when we visit? Notice I didn't say "if" but "when"...hehehe...stranger things have happened no?

    I wish as a group we could come over there...I had plans during the Holy Week this year, but I spent it instead in Cebu coz I missed lechon..este...being at home :-)

    P.S. I think nakakain din ako ng pochero sa Tacloban...hmmm..*jog memory*

    I swear, I had not eaten lechon or chicharon since 1st quarter of this year..and then when I did this last visit, I kept eating pork...drat it...afterwards, my body was unused to it so I kept on feeling sleepy (hehehe...SSB!)

  9. There is a restaurant here called Thelma's and they have a dish called Thelma's Special using lechon Kawali chopped into small pieces with chopped tomatoes, onions and a special sauce. That is soooo good!

  12. huhuhu! do you know, I had to make do with a pack of "Carcar chicharon" from the grocery na lang? I wasn't sure if it was authentic and I saw it was from Guadalupe...I think it was "Marky's"?

    since my parents don't indulge in this anymore, I wasn't sure which of the brands were really the "lami" (delicious) ones..so I had to be content with getting Chilen's, Chicharitos, Tropical and..the last one above.

    I can almost smell the tangad (lemongrass) here from where I sit...

    (I only go for chicken skin..hehehe..if I see roasted chicken, you can bet I will undress it in a hurry by taking off all its brown skin, crispy or not!)...as my mom says everytime she sees the chicken after it passes thru my hands - "oy, wa nay sinina!" ...hmm...dressed versus undressed chicken...:-)

    it may look the same but I think they are different..probably in the manner of cooking and the results though I bow to those who cook these dishes...

    its because I've tasted bagnet once before when a friend made a trip up North to Vigan and somewhere up in the Ilocos, and he kindly gave me a pack of bagnet.
    The latter is pork, is crispy and is also delicious...but its not lechon kawali though it may start out the same in terms of the ingredient and how the pork is boiled at first...parang chicharon yata ang bagnet :-)

    but of course, I better wait for Mommy Loy to confirm my food theories...hehehe...its just that my palate categorizes them differently...

    the way you described it...it may be bagnet...well...yung style na there's a mix of chopped tomatoes etc. I think is more in keeping with the Ilocos or Northern Philippines style.

    Isn't it wonderful how varied Philippine cuisine is? in a way we are lucky of the influences on our food ....some may say its confusing that is why we don't have a "national dish" easily identifiable with Philippines...but I say - its good to be Pinoy!

  18. Well, Cat. Hawaii is actually an extension of the Ilocos Region. Does that answer your comment? Most Pinoys here if you ask them, "Are you Pilipino?" They answer, "I am not a Pilipino. I am an Ilocano". What?*&%

    Dito nagsawa kami sa Ilocano food. That's why if we get invited to a Pinoy party and it is not Ilocano e.g. Bicolano or Kapampangan, we get excited because it is different variety. In our case, we serve different ethnic dishes and once in a while, good Pinoy food such as lengua or humba.

    Lechon kawali and bagnet are similar but bagnet is prepared differently in that, in the latter, huge chunks of pork are fried in huge vats and then hang-dried (is there such a word?) for several days before they are fried once more for table serving. Kanya po naman ang crackle. A week ago, Gwiz tried litson kawali which I photographed and was meaning to post. Ang preparation iba. The meat was boiled, frozen, and then fried. I don't know if Cebu's lechon kawali is prepared the same way.

    there are times I prefer "kinapusan", sometimes I want to eat "chicharon"..other times feel ko bacon...and other times I want to clog my arteries with lechon kawali...or maybe a one lechon de leche...choose your poison :-)

    sarap ng Pinoy food - may spanish influences, may chinese influences, may pinoy twist on other food (I still do not like spaghetti with sweet sauce though)...and though may Jap occupation..I can't say though I remember food we have which has Japanese influence....

    hey, with 7K plus islands...abah..cuisine is varied! with each region *grin* claiming to have the best this and that ...hahaha!

  26. yup, as I mentioned above, when I answered the question about lechon kawali versus bagnet - I tasted it before when a friend brought back some to me as a pasalubong :-)

    hence I said I think they are different...in taste and preparation...
    when I was in college, where I got my first taste of honest-to-goodness delicious lechon kawali at a fiesta in Carmen, I was boggled...e lechon ako ng lechon...anong diff ng lechon kawali e may chicharon pa nakalatag sa lamesa? pork is pork is pork...hahaha!

    kulikot for me (a kind of pepper back home) is enough to make me red-hot with happiness...*snot dripping from nose due to peppery hot-ness hahaha!*

  29. ayon..I heard that part about hanging them up to dry too for bagnet...

    lechon kawali from what I hear is also boiled, placed in freezer then fried...but I heard that while in kawali, the style is oil at very high temperatures (kaya ooops!...better watch out for the oil spattering around)

    ...for bagnet, parang mas matagal for frying and lower in temperature ang oil...hence not much spattering of the oil...and bagnet may be I think fried again (parang twice-fried?)...so much so that it does end up being drier...

    with lechon kawali kc, the meat is not dry like in the chicharon...it still like lechon meat itself...and its cooked in a big kawali/pan/wok

  32. hi Nona...nope, Mang Tomas is not "ou-soh" (in fashion) for us..though I do dip in Mang Tomas' sauce once in a while...but never for Cebu lechon as the meat is already flavored and using a sauce would just hide or overpower the lechon...

    For Cebuano lechon or in this case, lechon kawali, we don't usually use sauces...we can have sawsawans (dipping sauces) but usual wont is to dip it in native vinegar with sili (pepper) or maybe even catsup (I for one used to eat my lechon with banana catsup if I felt it was getting too oily already). The lechon and other viands here can usually stand on their own.

    The nice crispy skin part is so alluring, I feel like having it all the time especially when temperature drops down to a cooler climate. Bacon is the closest I could get my hands to in place of a good lechon.

  37. I don't know what happened...

    one minute I posted something about my eating dinner at Fely J's and commenting on their adobo versus Visayan adobo..

    then next thing I know Sir B texted me about looking for the perfect pork chop which led to my buying Hormel bacon...

    then going home to Cebu to look for lechon, then lechon kawali (coz of lack of time)...

    doing some emergency shopping led to my finding out that Hock Siu Chinese ham is available at Rustan's...so I had to get one no matter the price (this is one ham I really like...coz I don't think Besto's brand is still alive and kicking)

    ...and I ate a lot of it when it was supposed to be my dad's...then I brought with me to Manila some little packs of kinapusan and pork belly which my mom cooked for me....then Julius asked about bagnet..which made me long for it also...

    and then today Sir B retaliates by posting about their cooking lechon kawali...

    its like the last 2 weeks I got hounded by pork, pork, pork.....!

    as long as you can get your hands on pork belly or pork with lots of fat (well, I can vouch for the belly only)...this can be done easily there Mar :-) just wear armor to protect from oil splatter...hehehe!

  39. I could, I suppose but it's tough to find the pork belly in our regular grocery store. The best part -skin and fat- is nowhere to be found. I have to go to a Filipino/Asian store about an hour away to find it there, if there is.

  45. That's why dogs are woman's/man's best friend because they are always there to please their moms and dads.

    Because she eats just about anything, we do watch what Bella eats, esp. chocolate candies that might drop on the floor. Even fruits such as grapes and raisins can be toxic to them.

  46. While dogs and cats may be in the top 3 on the list for well-loved pets (no idea what would be the 3rd), I much prefer dogs because of their nature, they are so eager to please the "top dog" (which we are in their eyes hahaha!)

    Hmm...I heard about chocolates being toxic to dogs but even grapes and raisins huh? No idea on that..though akala ko fruits ok ang dogs - I have fond memories of one of my female Japanese spitzes having a liking also for durian - ka-competition ko for the durian fruit I used to bring from Davao.

    Mar, I have to give you fair warning...sometimes in my posts and in the entries of people where I reply (yes, magiging victim ka rin if I am not careful, mwahahahaha!) the range of topics being discussed are so unrelated to each other you'd wonder how I started off with ducks and pork and ended up with China toilets.

  47. ah, therein lies the irony...I don't have access to these food while I am in Manila, so as much as possible I try to get hold of 'em yummy dishes whenever I come home.

    While the Philippines do have a variety of good dishes to offer, its always been my belief that there are just so many kinds of mouth-watering edibles in my hometown, so I feel quite lucky.

    There are a lot of scrumptious, drool-worthy food Cebu is known for that medyo spoiled na yata ako e.g. lechon, chicharon, bisayan adobo, mango, dried fish, dried fruits (I've now seen coming from Cebu dried pineapple, dried jackfruit, mango/tamarind candy etc.), otap, galletas, seaweed (exported), to name a few...

  48. From their regular visits to their Veterinarians. Our dog does see his Vet regularly, just like us. In fact, he gets his regular check up more than I do. Vets can diagnose if they have HBP, diabetes, arthritis, cancer, etc. Kaya dito, mahal magalaga ng pets. Magastos. If dogs don't feel good, they won't even fetch the frisbee.

  50. i've never thought of dogs as even having those...siguro nga its because of the inappropriate food that dogs sometimes get to eat in these modern times...kaya nga siguro ganon din ang sakit nila...

    at least dogs naman try to please their owners even if medyo masama pakiramdam....

  52. That is true Cat. Actually, there are some junk dog foods just like our fast foods. Even worse are human food. My auntie used to feed her dog with rice and eggs with patis. Nagka heart attack na lang bigla.

    Dogs do give you UNCONDITIONAL LOVE! Even if you scold them, they will still love you to death.

  60. Depending where we live, some might consider birds (parakeets, parrots, finches, etc) as pets, some have fish (aquariums), reptiles (snakes, lizards), or horses, even pigs. Yes Cath, some say pigs are one of the most intelligent pets around.

  63. probably if a pig is super-clean and well-disciplined, I could take the idea of it as a pet....of course, baka nga ma-turn off na ako kumain ng lechon..

    but on another note, since they have these pot bellies, wouldn't they make good candidates as lechon due to the fat on their tummies? IMHO, I still prefer lechon de leche...ang theory ko is that when it comes to food, smaller animals (ok, meat-eaters!) are tastier...ex. I find smaller-sized fish, squid, pig, chicken more delicious than its larger-sized siblings...

    fuera lang siguro lobster ...kc reklamo talaga ako na maliit na lobster lang lately nakain ko sa Cebu :-) hahaha..probably inexport lahat...

    In actuality, there are diapers available for dogs and cats who are incontinent.

    Talking about dogs well being, I brush my dog's teeth everyday and give him a mouth wash everyday. I also wash his feet and wash his butt after I walk him in the park and wipe his feet with wet ones after he goes to the front yard to do his business. We also wash his food and water bowls daily and he gets filtered water for drinking. Parang tao ano. He is really like one of us and he also sleeps in our bed or my son's bed at night when we go to sleep.

I think washing the feet and butt after going out is important, especially if the dog stays inside the house and is let loose..its just part of good hygiene - after all, if he jumps into the sofa, chairs, beds etc. e tayo ngang tao nag-change clothes, naliligo etc. so its one thing the dog has to be subjected to..unless of course, naka-doghouse sya..

    even then with us, since our dogs are outside the house (masyadong mahirap kc with their fur and shedding inside our house with my mom being allergic)...kung akong nagpapalabas, I wash their feet when we get back after our romp (di ko lang nga nilalagyan ng soap)...

    filtered water - uhm..no...for me, though dogs are a part of my family, too much cleanliness naman I think would not be good in the long run..the dog has to be exposed to some of the expected elements as if he was living like a usual dog (di naman canal water but ordinary tap water)

  69. Of course we don't expect total cleanliness with our dog. He gets exposed to his normal environments whenever he goes out to the park for his daily walk. He is a Jack Russell Terrier who goes to ground a lot of times digging and stuff. We clean him up to keep our house clean. I hate muddy feet, even with humans. His water is not the bottled water but rather the same source we get ours, from the water dispenser from the fridge which has a filter. Once in a while, he gets tap water from the kitchen faucet pag tinamad akong pumunta sa fridge.

    Our dog sheds a lot too so everyday we sweep the floor and at least twice or three times a week, I vacuum the carpet. There was a time when Myra's had serious coughing for over a year. I found out that the cause of that was from the coat shedding. So from then on, we vacuum the floor more frequently and her coughing disappeared.

    parang I read/heard before of dogs who do shed, pero their fur kc are the type which would not trigger allergies...

  71. Yes he does drink cold water but not ice cold water.

    The fur of dogs who shed could trigger allergies too. You know what's interesting, it has been known that cat's fur can trigger allergies but what makes the cat's fur trigger allergies is when the cat licks their fur and their saliva gets into their fur, that's the one that triggers allergies. A newly bathe cat would probably not give you allergies when you are around them until they start licking themselves. It is a known fact.     Why are some people allergic to cats' fur?
    It's not the cat's fur that causes allergies. It's a protein (FEL D1) in the cat's saliva. When a cat grooms itself, it deposits this protein on its fur (and the protein then may be transferred to upholstery and carpets). Some cats have less (or more) of this protein. There is no way to predict which cat in a litter, if any, will be less allergenic, though females seem to be the lesser allergenic. Bathing a cat to reduce the amount of protein in the cat's fur has traditionally been recommended, but research may be tending to negate that conclusion. Instead, wiping down the cat using a damp microfiber cloth to remove visible dander may be more effective. I've also been told that a product called Allerpet, rubbed into the cat's fur, can help reduce the dander.
